		<Abstract>Environmental temperature and light characteristics, particularly photoperiod duration and radiation spectrum, are critical determinants of seed germination and physiological regulation. Edible sprouts gain prominence in nutrition due to their rich content of phenolic compounds, flavonoids, and antioxidant enzymes This research investigated the effect of three temperature levels (23,28,and 31 &lt;sup&gt;0&lt;/sup&gt;C), two photoperiods (12 and 16 hours), and two LED light types (white and red–blue) on the germination indices and antioxidant characteristics of mung bean, wheat, and clover sprouts grown hydroponically. Seeds were cultivated in a system using distilled water and aerated Hoagland nutrient solution on mesh trays, ensuring controlled ventilation and environmental conditions. The experiment followed a completely randomized factorial design with three replications. Measurements included germination percentage, antioxidant capacity (DPPH), total phenol, total flavonoid content, and the activity of catalase and peroxidase enzymes. Results demonstrated that temperature and light significantly influenced the physiological and biochemical responses of the sprouts. The 28 &lt;sup&gt;0&lt;/sup&gt;C temperature yielded the highest germination across all three species. Wheat exhibited greater stability compared to mung bean and clover at 31 &lt;sup&gt;0&lt;/sup&gt;C, while clover showed delayed germination at 23&lt;sup&gt;∘&lt;/sup&gt;C. The red-blue light combined with the 16 hour photoperiod significantly increased antioxidant indices overall. &lt;strong&gt;Species patterns were&lt;/strong&gt; mung bean displayed the highest antioxidant enzyme activity, wheat possessed the highest flavonoid content, and clover yielded the highest total phenol content. &lt;strong&gt;These findings show the need to harmonize&lt;/strong&gt; temperature, light quality, and photoperiod regulation &lt;strong&gt;to&lt;/strong&gt; optimize germination efficiency and enhance the overall nutritional value of these functional food sprouts</Abstract>
			<OtherAbstract Language="FA">دمای محیط و ویژگی‌های نور، به‌ویژه طول دوره روشنایی و نوع طیف تابشی، از مهم‌ترین عوامل تعیین‌کننده در جوانه‌زنی بذرها و تنظیم فرآیندهای فیزیولوژیک و بیوشیمیایی مراحل آغازین رشد محسوب می‌شوند. اهمیت این موضوع زمانی بیشتر می‌شود که جوانه‌های خوراکی به دلیل دارا بودن ترکیبات فنلی، فلاونوئیدها و آنزیم‌های آنتی‌اکسیداتیو، جایگاه ویژه‌ای در تغذیه و سلامت غذایی پیدا کرده‌اند. این پژوهش به‌منظور بررسی اثر سه سطح دمایی ۲۳، ۲۸ و ۳۱ درجه سانتی‌گراد، دو فتوپریود ۱۲ و ۱۶ ساعت و دو نوع نور&lt;strong&gt; &lt;/strong&gt;LED&lt;strong&gt; &lt;/strong&gt;شامل سفید و قرمز–آبی بر شاخص‌های جوانه‌زنی و ویژگی‌های آنتی‌اکسیدانی جوانه‌های خوراکی ماش، گندم و شبدر در شرایط هیدروپونیک انجام شد. بذرها در سیستم هیدروپونیک حاوی آب مقطر و محلول غذایی هوارسانی‌شده هُوَگ‌لند، بر روی سینی‌های توری با تهویه و در شرایط کنترل‌شده‌ی دما و نور رشد داده شدند. آزمایش در قالب طرح فاکتوریل کاملاً تصادفی با سه تکرار اجرا گردید و علاوه بر درصد جوانه‌زنی، مقادیر ظرفیت آنتی اکسیدانی(DPPH)، فنل کل، فلاونوئید کل و فعالیت آنزیم‌های کاتالاز و پراکسیداز اندازه‌گیری شد. نتایج نشان داد دما و نور اثر معنی‌داری بر پاسخ‌های فیزیولوژیک و بیوشیمیایی جوانه‌ها دارند. دمای ۲۸ درجه بیشترین جوانه‌زنی را در هر سه گونه ایجاد کرد، در حالی‌که گندم در دمای ۳۱ درجه پایداری بیشتری نسبت به ماش و شبدر نشان داد. شبدر نیز در دمای ۲۳ درجه با تأخیر جوانه‌زنی مواجه شد. نور قرمز_آبی و فتوپریود ۱۶ ساعته، موجب افزایش شاخص‌های آنتی‌اکسیدانی شدند. همچنین ماش بیشترین فعالیت آنزیم‌های آنتی‌اکسیدانی، گندم بیشترین فلاونوئید و شبدر بیشترین فنل کل را نشان داد. نتایج بیانگر اهمیت تنظیم هماهنگ دما، نور و فتوپریود در بهبود کارایی جوانه‌زنی و افزایش ارزش تغذیه‌ای جوانه‌ها هستند&lt;strong&gt;.&lt;/strong&gt;</OtherAbstract>
